Honey Glazed Duck Stuffed with Apples and Oranges


  • 1 whole duck (5-6 lb)
  • 2 apples
  • 2 oranges
  • 1 lime
  • 150 grams of honey
  • 1/4 cup of soy sauce
  • 1 tsp of cinnamon
  • 1 tsp of paprika
  • 1 tsp of dried basil
  • 1 tsp of oregano
  • 1/2 tsp of ground white pepper

Zest the lime and 1 orange in a bowl. Set the orange aside and juice the lime.

Mix lime juice with honey, all 5 spices, soy sauce, zest of orange and lime.

Transfer the marinade into a small pot and reduce over the low heat for 5-10 min till the liquid is reduced by about 30-40 percent.

Set aside and let it cool.

Peel the oranges and cut them along with apples into large pieces.

Once the marinade has cooled off, brush it generously inside of the duck.

Stuff the duck cavity with apple and orange pieces.

Pull the skin together and secure it with toothpicks or small metal skewers.

Turn the duck upside down and brush the neck cavity generously with some marinade. Stuff it with the remaining apple and orange pieces.

Pull together the skin and secure it with toothpicks or small metal skewers.

Brush the back of the duck with half of the remaining marinade.

Turn the duck over and brush it with the remaining marinade.

Place the duck into the oven sleeve.

Tie the bag and cut small holes in the top of the bag.

Place into a preheated 350F (175 C) oven on the middle rack.

Bake for approximately 2 hours or until internal temperature reaches 170F on the meat thermometer.

After the duck is fully cooked you may cut the top of the oven sleeve and put it back in the oven on the broil setting for 2-4 minutes.

You may serve the duck with some green beans or other vegetables and the apples from the stuffing (oranges should be discarded as they are not pleasant to eat).
